Yacon (Smallanthus sonchifolius) is a plant native to South America, where it has been used for centuries as food. The syrup made from its juicy and sweet tubers offers an excellent and delicious alternative to traditional granulated sugar. Its high content of fructooligosaccharides (FOS) and indigestible dietary fiber make Yacon syrup a sweetener with a low glycemic index and lower caloric content and therefore of interest to all those who wish to reduce sugar consumption.
