Manuka honey is highly appreciated for its aromatic and intense flavor and for its antibacterial activity, which is measured by the MGO (methylglyoxal) value. MGO determines the antibacterial capacity naturally present in manuka honey. The MGO can vary substantially depending on the plantation and the manufacturing process of manuka honey, so it is an important indicator to determine its quality.
Honey is a natural product. Variations in appearance, color and flavor depend on their nature. Almost all untreated honey crystallizes sooner or later depending on the variety. The quality of honey is not compromised in any way by crystallization. Many appreciate and prefer this characteristic of spreadable honey. By carefully heating it in a water bath to temperatures of up to 40°C, the honey quickly becomes liquid.
Like other raw foods, natural honey is not suitable for babies under 12 months.
