To prepare a good traditional matcha we need:
- A bowl or chaki, a small mesh strainer, a teaspoon or chashaku, matcha tea and hot water.
- Put the strainer on the bowl and add 1-2 teaspoons. With the same spoon we will help to paste the powder of tea making circular movements. In this way we eliminate any clumps that may exist.
- Remove spoon and strainer. Then add hot water (about 150 ml) and with the whisk (chasen) we begin with circular movements to dilute the tea in the water and then move vigorously zig-zag, without stopping to get a soft foam throughout the surface.
- We will know that our tea is ready when, when passing lightly through the foam, it does not separate. That is, we do not see the liquid.
Care of the
chasen: Before using for the first time it is advisable to soak in cold water for about 10 minutes. In this way the beater filaments gain flexibility.
After each use, clean with water, also cold, trying to remove the remains of tea. Dry carefully and store in an upright position (with filaments facing up) taking care not to get moisture.
